AIP Sweet and Savory Squash Boats

Let’s be real. Sometimes on AIP, things can get a little dull. It can become really easy to just find a few staple foods and eat them again and again, which can get totally boring! I tend to eat a lot of chicken and salad, but I was NOT feeling it today. I needed some real comfort food. Therefore, I came up with this recipe! It turned out so delicious, and with both the sweet and savory flavors it offers, I could see myself eating it for a dinner OR a breakfast. Not only that, but it’s so easy to make, which I am all about. Haha! I will definitely be adding it as a more common meal to my diet.


Without further ado–Here is the recipe!



  • 1 spaghetti squash
  • olive oil
  • sea salt


  • 1 to 2 Tbs. olive oil
  • 1 lb. organic turkey sausage
  • 1 medium apple, chopped
  • 1/2 an onion, chopped
  • 1 cup kale (loosely packed)
  • 1 Tbs. garlic
  • 1 Tbs. pure maple syrup
  • 2 tsp Italian seasoning (check to make sure it’s AIP approved ingredients!)
  • 1 tsp sea salt


  • Preheat oven to 400
  • Cut squash in half and scoop out the inside seeds
  • Coat inside squash with olive oil and add a pinch of salt to each half
  • Bake for 40 minutes

While squash is cooking, begin making the stuffing!

  • Heat oil in frying pan on medium
  • Once heated, add turkey sausage and break up with spatula
  • Once turkey begins cooking, add garlic
  • Cook about 2 minutes, add chopped onion
  • Cook another 2 minutes, add chopped apple, seasoning/salt, maple syrup
  • Once turkey is fully cooked, add Kale and keep pan on low till squash is done

Once your squash is out, you can use a fork to scrape the sides into noodles! Then, scoop the stuffing into squash halves. Top with parsley or cilantro if you’d like! Bon Appetit! 🙂
